dc.description.abstractThe specialty coffee industry has seen a dramatic transformation over the years, shifting from a small, niche market into a thriving global movement that influences culture, economy, and the environment. This change has been fueled by consumers' evolving tastes, technological advancements, and a growing demand for high-quality, ethically sourced coffee. Unlike the mass-produced coffee that once dominated the market, specialty coffee is all about premium beans, artisanal roasting, and a strong commitment to sustainability. Growth of Specialty Coffee The specialty coffee market has experienced rapid growth, evolving from a small-scale artisanal movement into a mainstream industry worth billions. A 2023 report by the Specialty Coffee Association (SCA) valued the global specialty coffee market at around $35 billion, with an expected compound annual growth rate (CAGR) of 8% over the next five years. This surge is driven by the rise of third-wave coffee, the popularity of single-origin beans, and a heightened consumer focus on sustainability and ethical sourcing. Third-wave coffee is a movement that treats coffee as an artisanal product, emphasizing bean quality, supply chain transparency, and the skill of baristas and roasters. The global spread of third-wave coffee shops reflects a growing desire for unique, ethically sourced coffee with superior flavor. For example, in the United States, specialty coffee makes up more than 50% of the total coffee market, with approximately 95 million Americans enjoying it daily. The success of independent coffee shops and specialty chains like Blue Bottle Coffee and Stumptown Coffee Roasters illustrates this shift toward quality.
